15 – Proteine alimentare în laptele mamelor

Salut.
S-a stabilit cu certitudine cum cantităţi bioactive şi semnificative de proteine şi peptide sunt preluate din intestin (1,2). Prin urmare nu este surprinzător că aceleaşi proteine pot fi măsurate în laptele mamelor (3-6). Acest lucru a fost obţinut prin metode imunologice şi de asemeni demonstrând că proteinele nu sunt fragmente ale precursorilor, prin electroforeză asupra gelurilor acrilamidă. Gliadin proteins see ref 6.
Că acest mecanism ar putea avea consecinţe grave este ilustrat de către multe lucrări corelând fragmente ale proteinelor din lapte cu inducerea anticorpilor care distrug celulele beta (celulele producătoare de insulină) şi provoacă diabetul (7-9). Anumite epilepsii sunt de asemeni corelate cu glutenul (10).
